Cozy Autumn Harvest Soup 🍂🎃

When the weather starts to cool down, there's nothing better than a warm bowl of soup while spending the afternoon scrapbooking with friends. This Autumn Harvest Soup is creamy, comforting, and packed with fall flavors. Best of all, it's easy to make ahead and serve in mugs for a no-fuss crop day meal!

Ingredients

• 2 tablespoons olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 3 cups butternut squash, peeled and cubed
• 2 cups carrots, sliced
• 4 cups chicken or vegetable broth
• 1 teaspoon cinnamon
• ½ teaspoon nutmeg
• Salt and pepper to taste
• ½ cup heavy cream (optional)

Directions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook until softened.
3. Stir in garlic and cook for 1 minute.
4. Add squash, carrots, broth, cinnamon, and nutmeg.
5. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
6. Blend until smooth using an immersion blender.
7. Stir in cream if desired.
8. Season with salt and pepper to taste.
